Stuffed Mushrooms (AIP and Paleo)

I have not always been a fan of mushrooms. However, in the last few years I have grown to really enjoy them. These stuffed mushrooms are delicious! The mixture of onion and garlic has almost a sweet flavor.  

10 Mini Bella Mushrooms - Gently clean with a wet wash cloth, destem, and chop the stems up 

1/2 Onion chopped

1 Garlic clove minced

2 TBSP olive oil

1 TBSP coconut aminos

1/2 lb Ground pork

1/2 lb Ground grass fed beef

1 cup Bone broth beef or chicken

Preheat oven to 350.

Brown ground pork and ground beef in a skillet.

In a separate skillet, add the olive oil and coconut aminos, and saute your garlic, mushroom stems, and onions until a nice crispy brown. 

Place the garlic, olive oil, mushroom stems, and onion mixture in a food processor. Add the bone broth and mix to the consistancy of gravy. Once mixed, remove about 1/3 cup and set aside to top your mushrooms with later.

Combine the rest of your gravy mixture with your browned meat. Scoop this mixture into your mushrooms, about one tablespoon each, and place on a baking sheet. 

Bake in preheated oven for about 40 minutes.

Once done, remove from the oven and let cool. Top with a small amout of your reserved gravy mixture.  ENJOY!
