Coconut Ice Cream (AIP and Paleo)

I put the recipe choice to a vote in my house this weekend and ice cream won. As far as recipes go, this is super simple and easy to make.  This does require that you have an ice cream maker. (I love this one.)  

2 13.5 oz cans Coconut Cream 

1/2 C Maple Syrup

Combine the coconut cream and maple syrup in a pot and slowly warm on the stove top over low heat. Warm until the cream is fully melted and smooth.

Let cool.

While the mixture is cooling, put your ice cream maker together.

Follow your manufactures instructions on how to make ice cream. Usually you have to turn the ice cream maker on and slowly pour the cream mixture in until about the consistancy of soft serve ice cream.

Freeze until desired thickness.
