Apple, Avocado and Chicken Spinach Salad (AIP and Paleo)

If you are like me, then I am sure there a times where you find yourself in a bind with trying to come up with a healthy meal in a short amount of time.  I have learned to bulk prepare meat in the crock pot over the weekend, and to have spinach prewashed and ready to go in the fridge. Then, all you have to come up with are ways to enjoy it throughout the week. This is a super simple, speedy, and healthy meal for when you are in a pinch.  

Prepare your chicken 

2 chicken breast 

2 cups of chicken broth

Place your chicken and broth in the a slow cooker for at least 8 hours on low, or 4 hours on high. Then, shred and place in the refrigerator until needed.  

Once you have your chicken, you will need:

3 C washed spinach

1/2 C shredded cooked chicken

1/2 apple, thinly sliced and chopped 

1/4 of an avocado thinly chopped and sliced

Balsalmic dressing (olive oil and balsamic vinegar at a 2:1 ratio, then add a touch of sweetner such as maple syrup or honey) 

To assemble your salad, place your spinach on your plate and top with shredded chicken, apples, and avocado, and drizzle with balsalmic dressing. ENJOY!
