Bacon Wrapped Sweet Potatoes

Did someone say "bacon?"  If you are like my family, you can never have enough bacon. This is a super easy way to get a starchy veggie in along with some protein. These never last long around our house.  

1 Sweet potato, peeled and cut into large fries

1 Package bacon (Make sure it is clean bacon with no extra added gunk.)

Preheat your oven to 400 degrees. 

Slice the bacon into the size of large fries. Cut the bacon strips in half and wrap around each piece of sweet potato. Place on a baking sheet.

Bake in a 400 degree oven for 40 minutes. Let cool for 5-10 minutes and ENJOY!  It really is that easy!
