Chicken Apple Bacon Bake (AIP and Paleo)

When trying to get everything done in a day, it can really be a struggle to get a healthy meal together. Being able to toss everything into one pan to cook can save a ton of time and dishes.  

1 large chicken breast or 2 small chicken breasts, chopped into chunks

1/4 C balsamic vinegar

1/3 C olive oil

Juice of 1/2 lemon

2 garlic cloves, minced

2 apples, chopped

1 package of clean bacon

Preheat oven to 375 degrees F. Mix the balsamic vinegar, olive oil, lemon, and garlic in a food processor. Place the chicken in a 9 x13 pan. Pour the balsamic vinegar mixture over the top. If you have time,  let it marinate. If not, simply add the apples and bacon and mix. Place in the oven for 20 minutes, then raise the temperature to 425 degrees F for 15 minutes. Cool and Enjoy!
