I was wanting something different for breakfast. I honestly could not remember the last time that I had coffee cake, and it sounded so amazing! Sometimes you just need a change.
1/2 C palm shortening
1/2 C maple sugar
1 C unsweetened applesauce
2 C almond flour
1/2 C tapioca flour
2 tsp baking soda
2 tsp cinnamon
3/4 C almond flour
1/3 C maple sugar
2 tsp cinnamon
1/4 C palm shortening
Preheat oven to 350 degrees F. Grease a 9x9 pan with coconut oil.
Cream together the palm shortening and maple sugar, then add in the eggs, then the applesauce.
In a separate bowl, mix together the almond flour, tapioca flour, baking soda, and cinnamon, then slowly add to the applesauce mixture.
Add batter to the greased pan. Mix together the topping ingredients with a pastry blender and gently add to the top of the batter.
Place in the oven for 35 minutes.
