Roasted Butternut Squash (AIP and Paleo)

When I chat with people about incorporating more squash into their diets, often times their response is that they just do not know how to prepare squash. This recipe is so easy and you can make it even more simple by purchasing pre-cut butternut squash.  

1 butternut squash 

1 TBSP olive oil

Perheat oven to 400 degrees F. 

Slice the bulb end off the squash. Using your knife, peel the outside of the squash and dice it into one-inch chunks. 

Scoop the seeds out of the bulb end and peel and dice that end. 

Place the diced squash in a bowl and drizzle with the olive oil.

Cover a baking sheet with parchment paper and place the squash on top. Bake for 40 minutes.

You can eat the roasted squash as-is or add it to a salad with some dressing.  ENJOY!
