Kiwano orange ice cream

Sometimes its so easy to get stuck in a rut. You know what you like and you stick with it. I was at the store and I spotted these incredible prickly kiwanos. I mean they were sharp! They were not fun to hold on to. I wanted to see how to prepare them and use them. An ice cream seemed like a good idea!

2 kiwano fruit

3 mini oranges or one large orange

1 can coconut cream

2/3 C maple syrup

3 TBSP tapioca starch

To start, slice the kiwano lengthwise into four long pieces.

Place the juice and seeds in a blender until smooth. Run through a fine mesh strainer to remove the seeds. 

Next, peel the oranges and place in a blender until smooth. Run these through the mesh strainer as well. 

Pour all blended fruit into a pot. Add the coconut cream, maple syrup, and tapioca starch. 

Gently heat until the mixture thickens to desired consistancy. Cool in the freezer or fridge.

Once completely cooled, add to an ice cream maker according to manufacture's instructions.
