Flourless Brownies (Paleo)

Before I started eating Paleo, dates were not a part of my diet. But since adding them in I eat them on a regular basis. I have come to really enjoy them! Dates have a low-glycemic index, more potassium than bananas, and are a great source of fiber.  

3/4 C Dates (I prefer Rancho Meladuco)

1/4 C Water

1/2 C Crunchy Almond Butter

5 TBSP Cacao Powder

1/2 tsp Baking Soda

2 tsp Vanilla Extract

2 tsp Apple Cider Vinegar

Preheat oven to 350 degrees F.

In a food processor with an S blade attachment combine the dates and water. Blend until a paste forms. You may have to scape the sides a couple of times until the mixture is smooth. 

Next, add the almond butter, cacao powder, baking soda, vanilla, and apple cider vinegar.   

Process until all the ingredients are combined.  Place in a greased mini-muffin pan. I greased mine with coconut oil. 

Bake for 15 minutes. ENJOY!
