Blueberry Muffins (Paleo)

I have not had blueberry muffins in so long. This won the vote for breakfast in our house this morning. They were delicious! I also know my family likes what I bake when they go back for seconds, and everyone went back for more!  

4 TBSP palm shortening

6 TBSP maple sugar

3 eggs

1 TBSP lemon juice

1 tsp vanilla

1 1/4 C Almond flour

1/4 C Arrowroot flour

1 tsp baking soda

1 C blueberries

Preheat your oven 375 degrees.

In the bowl of your mixer, cream together the palm shortening and maple sugar. 

Mix in the eggs, lemon juice, and vanilla. 

In a separate bowl combine the almond flour, arrowroot flour, and baking soda. Then, fold in the blueberries.
