The credit for this recipe allgoes to my mom. She whipped this up while we were camping over the weekend. When I was a kiddo I did not like rhubarb, but now I really enjoy it! This recipe is delicious on its own or extra amazing over ice cream.
4 Cups rhubarb chopped into bite size pieces
1 Cup strawberries
1/4-1/2 C honey (this will depend on the tartness of the rhubarb and your preference for sweetness)
Mix all ingredients in a medium pot and place on the stovetop for 10 minutes, stirring gently. Once the mixture is warm and the strawberries are broken down, its done. ENJOY!
