Peach Cobbler (Paleo and AIP)

My goodness how time flies.  I can not believe it is past labor day weekend.  This summer was busy and crazy and so much fun for me and my family.  I hope you enjoyed your summer with your family also.  Nothing quite says summer like peaches and this peach cobbler is amazing.  

For the peach mixture

8 peaches sliced 

2 tsp cinnamon

2 tsp maple sugar

1 1/2 TBSP tapioca flour

Mix all ingredients in a bowl, then place in the bottom of a 9x13 pan greased or lined with parchment paper. 

For the topping

1/4 C palm shortening

1/4 C coconut flour

2 tsp cinnamon

1 TBSP maple sugar

1/4 C arrowroot flour

Mix the dry ingredients in a bowl, then cut the palm shortening in until small crumbles form.  Then place on top of the peaches and back at 350 degrees for 40 min.  ENJOY!
