I love this time of year. The mornings are cooler and the leaves are starting to change color. It seems like gardens are in their prime also. We have been given so many cucumbers that we had to do something with them. This cucumber salad is so tasty, in facy my son was literally licking his fingers with this one. I hope you enjoy.
2 medium cucumbers
1/2 C Paleo mayo
2 tsp apple cider vinegar
2 tsp maple sugar
Wash and slice your cucumbers into small discs and place in a bowl. In a separate small bowl mix the paleo mayo, apple cider vinegar and maple sugar. Then pour the mayo mixture over the cucumbers and mix it all together. ENJOY!!
