Butternut Squash Soup (Paleo and AIP)

As fall is settling in, it is starting to feel like comfort food season.  One of my favorites is soup.  This butternut squash recipe has a light flavor and texture, perfect for a beautiful fall day.  

Butternut Squash soup

1 medium onion diced and sliced

2 garlic cloves minced 

1 TBSP Olive oil

1 large butternut squash diced

4 C of chicken or veggie broth

1 C coconut cream

Salt to taste

In a large soup pot add your olive oil, onion and garlc; saute for 5 min.  Then add your butternut squash and chicken broth, bring to a boil then simmer for 20 min.  Then let cool slightly and place in blender and puree.  Then place back in the pot and add the coconut cream, warm until the cream has melted into the butternut mixture.  Let cool and ENJOY!!
